Select and Fire options allow select items to be fired to the selected stations at different times.
The Three different buttons indicate different types of firing
Hold:
The Hold button is used if you have added items to an order and would like to save and exit the order but are not ready to fire those items to the kitchen yet. This button can be useful if you have added items to an order and would like to exit the order and come back later to modify the order or make changes to items. (The Hold button applies to the whole order; you cannot use the Hold button for individual items)
Stay:
The Stay button is used if you have added items to an order that need to be sent to the kitchen before other items on the order. These items could be appetizers or items that take longer to prepare. The Stay button allows you to send select items the kitchen while keeping that order open and adding items to that order.
Send:
The Send button is used when items are ready to be sent to the kitchen and the order is ready to be exited right away. With this function selected items can be fired or the whole order can be fired to the kitchen.
